I have seen a few opals that reacted to water the same way. My opinion is, it is unusual. What is happening? The opal is slightly porous and is soaking up the water. In doing so, it changes the angle of the light entering the opal. The light is no longer refracted, so the color spectum no longer exists and all you will see is white or clear opal without the play of color.
